Dylan Salisbury, Managing Partner

Dylan Salisbury is the Managing Partner of Bill's Oyster and Teddy’s Restaurant & Bar. Dylan's hospitality career began with Grub Burger Bar where he was the Executive Sous Chef and Operations Manager for the company. After opening 22 restaurants with Grub, he moved on to open The Henry in Dallas, TX as the Sous Chef. After working throughout Texas, Dylan explored the renowned culinary and cultural epicenter that is New Orleans. There, he worked with Chef Eric Cook and Chef Bill Jones advising for their new concept openings. After a few years in New Orleans, Dylan relocated to Phoenix, AZ, where he became the Executive Sous Chef for the Phoenix Suns. In 2021, Texas called him home. Dylan opened Tiki Tatsu-Ya in Austin, running both the front and back of house as the General Manager and Chef de Cuisine. This role evolved into taking on a multi-unit role with Tatsu-Ya, operating their full service concepts before opening Bill’s Oyster and eventually Teddy’s Restaurant & Bar.

Alex Lakeman, General Manager

Alex was born and raised in North Bend, Washington before finding her new home in Austin, Texas. She began her hospitality career with Tatsu-Ya, working at multiple full service concepts in a leadership role. She eventually took on a management position, opening the new Chinese restaurant Zoe Tong. She finally made her way to Bill's Oyster where she worked every role in the restaurant before being promoted to the General Manager of Teddy's.

Kendall Brewer, Assistant General Manager

Kendall grew up in Indianapolis, Indiana where she attended DePauw University as a double major in painting and art history. Her start in hospitality began at a local farm stand; making pies and working the counter selling produce. As she continued to pursue a career in the industry, Kendall began working at Bar One Fourteen which at the time was one of Esquire's Top 100 Bars in the country. Eventually wanting to relocate, she found herself in Austin where she began working as a server at Bill's Oyster. There she quickly moved into a bartending and shift lead position before taking the Assistant General Manager role at Teddy's.

In her freetime Kendall enjoys painting, playing with her dog Ruby, and being in nature; usually on a run.
